Chilli Con Carne Recipe | Slimming World

One of my faviourite meals is a Chilli Con Carne. Such an easy recipe to do and a nice warming one for the autumn.
This can easily be made so that its a syn free meal on Slimming World.


Minced beef (5% fat or less)
1 Onion, chopped
2 Peppers (Any colour), chopped
1 Can red kidney beans, drained
1 Can chopped tomatoes
2 tbsp Tomato puree
300ml beef stock
2 tsp Chilli powder
1 tsp Cumin
1 Garlic clove (I used crushed garlic)
Salt and pepper
Fresh coriander, to garnish

 
 



First fry the mince off until its gone brown. If you need to use oil then use the 1 calorie spray. I usually get away with just cooking the mince without oil. Add the onion and garlic and cook for a further 5 mins.

 
Next add the peppers and fry for another 2-5 mins



Put all the other ingredients into the pan and bring to a boil. Now simmer for about 40 mins stirring occasionally



It really is as simple as this.

Great to serve with rice, jacket potatoes, wedges or even just on its own.

I saved a small amount for Sonny as well and he loved it also.
